The over-the-shoulder throw is a throw that can be used as an immediate defense in certain situations.
If you have been so unaware as to allow an opponent to slip up behind you and grab you from behind (NO ninja should be this unaware, of course), then you can use the over-the-shoulder throw to fling your opponent down upon the ground before you, where you can take him out swiftly with one of the ninja on-the-ground finishing moves. This throw can also be used on an opponent grabbing you from behind as you are sitting in a chair.
Remember, though, that this throw is more a specific defense to these 'attack-from-behind' situations than a general-purpose response to attack. If you use it in combat against multiple opponents, make sure that you have some space around you at the moment that you use the throw, and that one of a number of attackers will not knife you as you execute this - or any other - throw.

The crouching over the shoulder throw is a throw that is very easy to apply, and indeed, can even be applied when one is seated. It is usually best applied after you have stunned the opponent momentarily with a few heavy blows, but it can also be applied if someone suddenly comes up behind you and wraps an arm around your throat.
APPLYING THE CROUCHING OVER-THE-SHOULDER THROW
Applying this throw is very simple. First, you grip the opponent's arm AFTER stunning the opponent
Then you draw the opponent's arm over your shoulder, while turning your back to the opponent and going down on one knee. As you go down, pull the opponent down with you so that he is already half bending over your shoulder.
Finally, begin to throw the opponent over your shoulder. This movement is powered by a twisting of your torso and shoulders and the opponent's OWN weight.
At the end of the throw, the opponent is on the ground before you. Use a finishing move to ensure that he does on re-enter the conflict. Watch the video carefully, and practice the throw regularly until you are comfortable with the mechanics of the throw.
As with all throws, it is best if you practise this throw on a soft and yielding surface. If you practise with your friends, be very careful not to injure them. Look at how the master executes the throw in the video, and see how he avoids injury to the student. The person being thrown can reduce the force of the throw by slapping the mat hard.
